    Microgreens: What Does Science Really Say About Their Nutrition?


    A look at USDA research on vitamins, minerals and plant compounds in microgreens


    Microgreens may be small, but they have attracted considerable scientific interest.

    Harvested while still young, microgreens are the tender seedlings of vegetables, herbs and other edible plants. They are used in salads, sandwiches, wraps, smoothies and as fresh additions to everyday meals.

    But how nutritious are they really?

    Rather than relying on social-media claims, it is useful to look at what scientific research has actually found.

    One of the most frequently cited research groups in this area includes scientists from the USDA Agricultural Research Service (USDA-ARS) and the University of Maryland. Their research examined the vitamin, carotenoid, mineral and phytochemical composition of numerous microgreen varieties.

    The landmark 2012 microgreen study

    In 2012, researchers Zhenlei Xiao, Gene E. Lester, Yaguang Luo and Qin Wang published a peer-reviewed study titled:

    “Assessment of Vitamin and Carotenoid Concentrations of Emerging Food Products: Edible Microgreens.”

    The study was published in the Journal of Agricultural and Food Chemistry.

    The researchers analysed 25 commercially available microgreen varieties and measured important vitamins and carotenoids, including:

    • Vitamin C

    • Vitamin E

    • Vitamin K

    • Beta-carotene

    • Lutein/zeaxanthin

    • Violaxanthin

    The results showed something particularly important:

    Different microgreen varieties can have dramatically different nutritional profiles.

    Vitamin C, for example, varied widely among the varieties tested. USDA-ARS reported values ranging from approximately 20 to 147 mg per 100 g fresh weight. Carotenoid concentrations also varied considerably.

    This means there is no single nutritional profile that applies to all microgreens.

    The variety matters.


    Which microgreens stood out?

    Among the 25 varieties tested in the 2012 study, several varieties showed particularly notable concentrations of specific nutrients.

    Red cabbage microgreens

    Red cabbage microgreens had the highest vitamin C concentration among the varieties tested, at approximately 147 mg per 100 g fresh weight.

    Garnet amaranth

    Garnet amaranth showed one of the highest vitamin K concentrations.


    Green daikon radish

    Green daikon radish showed the highest vitamin E concentration among the 25 varieties tested.


    Cilantro

    Cilantro was particularly notable for its carotenoid concentrations.

    These results demonstrate an important principle:

    Different microgreens can excel in different nutritional compounds.

    There is no single “best” microgreen for every nutrient.


    USDA studied minerals in 30 Brassicaceae microgreens

    The research did not stop with vitamins and carotenoids.

    In 2016, USDA-ARS researchers led by Yaguang Luo, together with Zhenlei Xiao and other researchers, studied the mineral composition of 30 Brassicaceae microgreen varieties.

    The researchers measured:

    • Calcium

    • Magnesium

    • Phosphorus

    • Potassium

    • Sodium

    • Iron

    • Zinc

    • Manganese

    • Copper

    The 30 varieties represented 10 species within six genera of the Brassicaceae family. The minerals were analysed using laboratory methods including inductively coupled plasma optical emission spectrometry.

    This research again demonstrated that mineral concentrations can vary substantially between different microgreen varieties.


    Another USDA study looked at phytochemicals

    USDA-ARS researchers subsequently examined 30 commercial Brassica microgreen varieties for a broader range of bioactive compounds.

    The study examined compounds including:

    • Vitamin C

    • Vitamin E

    • Vitamin K

    • Carotenoids

    • Glucosinolates

    • Phenolic compounds

    • Antioxidant activity

    The researchers observed significant differences between varieties.

    Some of the notable findings included higher concentrations of vitamins C, E and K in microgreens grown from cauliflower, red radish and rapini seeds, while upland cress microgreens showed particularly high carotenoid concentrations.

    This is particularly interesting for anyone choosing microgreens based on nutritional diversity.


    Why variety matters

    Imagine comparing broccoli, radish, mustard, pea and sunflower microgreens.

    They may all be called “microgreens,” but they are not nutritionally identical.

    Their nutritional composition can be influenced by factors such as:

    Plant genetics → variety → growing conditions → light → harvest stage → handling and storage

    The USDA research makes the first point especially clear: genetic differences between varieties can produce substantial differences in nutrient and phytochemical concentrations.

    This is one reason we believe consumers should enjoy a variety of microgreens, rather than focusing on a single type.


    What about broccoli microgreens?

    Broccoli is one of the most popular microgreens, and it belongs to the Brassicaceae family.

    Brassica microgreens are particularly interesting because they contain naturally occurring glucosinolates and other phytochemicals.

    The USDA research investigated glucosinolates and other phytochemicals across different Brassica microgreens and found substantial differences between varieties.

    This does not mean that broccoli microgreens should be considered a medicine.

    Instead, it highlights why including a variety of colourful vegetables and microgreens in a balanced diet can be an interesting way to increase dietary diversity.


    Are microgreens “5 times more nutritious”?

    You may have seen claims online saying:

    “Microgreens contain 40 times more nutrients than mature vegetables.”

    That statement is too broad.

    The original USDA research did not establish that every microgreen contains 40 times more nutrients than its mature counterpart.

    USDA-ARS reported that, in general, the microgreens studied had considerably higher concentrations of certain vitamins and carotenoids than their mature plant counterparts, with an overall difference of about five times in the comparisons discussed by USDA. However, the actual difference varied by plant and nutrient.

    For example, the 2012 research found vitamin C concentrations ranging widely among microgreens.

    Therefore, a scientifically responsible statement is:

    “Research has found that some microgreens can contain substantially higher concentrations of certain vitamins and carotenoids than their mature plant counterparts.”

    That is very different from saying:

    “All microgreens have 40 times more nutrients.”

    Microgreens are not medicine

    This distinction is extremely important.

    Microgreens are food, not medicines.

    Scientific research into the nutritional composition of microgreens does not mean that eating a particular microgreen can cure or prevent a disease.

    For example, it would be inappropriate to claim that broccoli microgreens:

    • Cure diabetes

    • Prevent cancer

    • Control blood sugar

    • Cure high blood pressure

    • Replace medication

    Such claims go beyond what these nutritional composition studies establish.

    In India, FSSAI regulations also place restrictions on disease-prevention, treatment and cure claims for foods unless specifically permitted. FSSAI's regulations also require claims to be scientifically substantiated.

    What does this mean for your daily diet?

    The most useful takeaway from the research may be surprisingly simple:

    Don't look for just one “super microgreen.”

    Instead, enjoy variety.

    For example, you might combine:

    Broccoli + Radish + Mustard

    or

    Broccoli + Pak Choi + Beet

    or

    Radish + Sunflower + Pea

    Different plants naturally provide different combinations of vitamins, minerals, pigments and phytochemicals.

    A colourful combination also makes meals more interesting.

    If we had to summaries the USDA research in one sentence, it would be:

    Microgreens are not all nutritionally identical—different varieties can contain substantially different amounts of vitamins, minerals, carotenoids and other naturally occurring plant compounds.

    That is perhaps more useful than the exaggerated “superfood” claims commonly found online.

    Conclusion

    Microgreens may be tiny, but scientific research shows that they can be nutritionally interesting foods.

    Research by USDA-ARS and University of Maryland scientists examined dozens of varieties and found significant differences in vitamins, carotenoids, minerals and phytochemicals.

    The key lesson is not that one microgreen is a miracle food.

    The lesson is:

    Variety matters.

    Including different microgreens as part of a balanced and diverse diet can add fresh flavours, colours and naturally occurring nutrients to everyday meals.
